Hot sauce recipe for prisoners
If you're in prison and like hot sauce the hot sauce you have is probably not as spicy as you like . But you can make hotter hot sauce. Take some hot peppers. Depending on if your prison has a garden or not ... You may or may not be allowed to have these. I'm in prison, so I'll say no more about the actual species of the peppers . Anyway. Cut them real small with nail clippers and latex gloves. Put them in a small disposable dish- I use a cleaned out kosher meal container. Add a small amount of parkay oil to the tray and microwave it until its melted. Now, add the peppers to the oil. I also add minced garlic . Now microwave them in the oil for 20 seconds at a time, not allowing the plastic to get too hot. This is actually a nonpolar extraction where the hot oil is the solvent and the terpene capsaicin in the pepper is the solute. Taste the oil. It should be spicy. Once it is, add a small amount of vinegar to the oil. I use pickle juice. I'm not a scientist but I think the acid will break the fat chains down and , then , maybe the capsaicin goes into the water portion of the diluted vinegar ? But capsaicin isn't an alkaloid, so I'm not sure . Anyway. Cook the vinegar oil and pepper mixture until the vinegar boils just a little. Now pour this into a bottle with your regular weak " Tabasco " type hot sauce. Shake it up and wait, or even heat it a little in the Tabasco ( Not in the bottle ). Now tpit should be much hotter. You can also do this with the chili garlic sauce they sell for a thicker hot sauce. The same principle works to get the heat from red pepper flakes. If you had a thickener you could make a hot sauce from just ingredients this way ... the main reason I add it to hot sauce is just so its the consistency of hot sauce.
